There's so much money flowing around that if you don't carpet after a stackwipe, AI enemies will hire mercs/armies and quickly reform.

Plus I don't think AI does sorties so even 1 guy in a province is enough to prevent the enemy from reforming.

When I don't have enough units to carpet siege, I siege provinces adjacent to my main army and move (or start moving) the main army whenever the AI threatens my sieging units.

Carpet sieging is always the option after the enemy's armies have been crushed. But remember the allocate your artillery in such a way that you get the siege bonuses from them.

And remember the optimal distribution of artillery: put 1 artillery in every province you're sieging for a +1 bonus, and if you have any leftover, bunch them together to get as many +5 bonuses as possible.

There is no point to have more than 5x artillery and 1x infantry/cav but if you can siege all of the opponents provinces ,then do so.
Else you have to keep all your mil close or else, attrition or enemy stacks will wipe them out. That said,if i have 10 arts and i have to seige lvl2 forts,It is always faster to siege 10 provinces. But in the late game, with lvl5 forts,You need that +5 art bonus to seige quickly

Yup, don't carpet siege if the enemy still has sizeable forces. Split your army through 3-4 provinces close to each other instead. If the enemy army shows up you can quickly react.

Stack if you're having trouble destroying the enemy armies, carpet siege if they've been wiped.

All good suggestions, you should also have a merc running around looting if you can. The AI is much better about pursuing looters now, but two or three high tax provinces pay for the merc anyway. Another good trick is to land in a province after it's 75% done building a troop, the AI has paid for it, but cancels it anyway. Looters can thus eat the economy of your enemy. Looted reduces a provinces income by half for 6 months, and the money they used to make the troop is gone forever.

Looting gets you the base tax of a province in ducats directly to your coffers. The AI will almost always pursue a looter that goes into a province bordering their stack, and since 1.7 will chase you from even further than that if they've nothing better to do (from the AI perspective).

You can't loot provinces that border any province you have access to (even military access), except the HRE access doesn't count.
