Let's say I start a new faith. I can conquer new lands and then convert them, but it would be all within the same realm, even if bigger. Is there a way to make foreign rulers take that faith as well?

No, even if you kidnap and imprison them you can't force a landed character to change faith unless it's one of your vassals iirc.

If you play without ironmode you can switch to that ruler and switch faith that way.

You can always get a claimant to come to your court, demand their conversion, then press their claim ;)

They will likely need to be your ally though, as their vassals are unlikely to be happy with their new liege.

You can kidnap an unlanded heir, force them to convert and marry one of your close family, then assassinate their leader. Your new friend will become the ruler, and is now allied to you. That is good, because they will need your help to stop 300 revolutions and factions from deposing them.
