I didn't suspect about those bride at all so just grabbed the 1st one (the saxon) and besides some stats increase for the heroes she brought me an unique unit - Knights of Elaine. Which I dismissed because it didn't look something very special to me.

I'm pretty sure there are only two possible Queens - Elaine and Guinevere. Both Queens do the same thing (stat boosts for knights, 1 unique heavy infantry). The Queen you can get is based on which major faction you allied with in Chapter 2 - the Saxons or the Welsh.
