Ipsos is Modern Greek. Ἱψός is Ancient Greek.

Ermm, both are just Greek as Ιψός is the Greek name. "Ipsos" has no modern day Greek characters as it's in the Latin alphabet but several two thousand years ago some Greeks used the Euboean alphabet which is pretty much the same as the Latin alphabet, so if anything, it's more accurate to say the other way round

The Euboean alphabet is pretty much the one we are using at the moment, but with more properties.
Also called Chalcidean or Cymean alphabet, later on called Latin alphabet. It still used the Ψ symbol though and you can see the reasoning as there's no equivalent letter in the modern day Latin alphabet either.

As far as I can gather (using the god-source wikipedia) it's 'Iψός' in both. Transliterating as 'Ipsos'.
