Hey, does anyone know if it's possible to dynamically create societies?
i.e. I want every king to have the possibility to found their own monastic order but only want to code a generic monastic_order, do you think that's possible?
Or would I have to code a potential order for every conceivable king?

You can't disable societies in the same way you can titles. Societies are always around, you can set a global flag to turn on/off the ability to see the society and for people to be a member of it which can simulate the behaviour you want in turning them on or off.
But your idea of having a dynamic society per king is not feasible, that would require a society per king to be scripted.

Not my area but I imagine it would not be too bad, as long as you do not have a mod with loadssss of titles (but I am not a programmer so take that with a grain of salt), but the likely issue would come from tying the title to the society and what to do in the case of the title being destroyed etc. As duke+ titles are not static in always having a holder.

Yep but they do not get removed instantly, so there is still some time for them to do stuff. Also the conditions for this are not shown anywhere so having them shown from somewhere else in the UI is a good idea as well. The part about hiding the society is more just a precaution in case you accidentally mess up the active part and end up with the society still being around you can then still prevent people from joining anyway.
