As the title says. I have not played Stellaris for 6 months or so due to MP being very very ba and SP feeliong a bit incomplete. What changes have been made/new DLC that has come out

Less corvette spam, no tachyon lance spam, no colonising the galaxy with 1 robot metastrategy, sectors work better, fallen empires can wake up and mess you up. Spamming colonies is slower due to the influence cost of colonising, but there's no tech requirement for colonising different planet types, you just need over 40% habitability (planet types have also changed). Ethics divergence has gone through the roof, spiritualist and pacifist governments no longer allow for max happiness build, and happiness offers bonuses on a continuous scale so each percent gained is good.

DLC : can obtain even better ship components from defeating tough enemies in space, two fallen empires can go head to head and bring everyone into a galaxy wide war.

Lots of stuff, though if you can wait a little bit longer I would wait a month or so for the next update, 1.5 Banks, which will revamp and improve a lot of features relating to ethics, factions, and pops.

I will add a few things to the list I suppose.
They overhauled ship building, added humanoid phenotypes, and the habitable planets are now divided into three climate types, wet (continental, tropical, ocean) dry (desert, arid, savannah) and cold (tundra, alpine, artic) planets that are the same type as your homeworld are 80%, same climate type is 60% everything else is 20%.

The DLC pack is called Leviathans, and along with what lordmagus said, they added Enclaves, special stations with traders, artist, and scientist who can offer their services to you, and Guardians, ancient creatures (each is unique) that guard some sort of treasure or secret in their own system.
