I'm probably just missing this somewhere -- is there a way to customize the paintjob, unit colors, whatever, on your units in Skirmish mode?

yes. you have to click on the top right on the start screen where it has your callsign.
So in other words, we can't change what our mechs look like in single-player Skirmish, without signing the game in online.
