What file format are the data files in? I can open and edit with either Wordpad or Notepad, but when I go to save them I don't see anything that is like the "incremental file format" that the rest are in.

All files are UTF-8. If you mean *.inc files then just save them with that designation. It stands for include as in database read-inclusion. The program only searches for names so extension doesn't really matter. Don't use Wordpad. It will write in an improper format.
