Two things:
1. Do the siege calculations take into effect the morale of the army, or just its size? It would seem odd that a low morale 2000 man army that can be easily beaten by 500 men, can also take down a small castle in a short amount of time.
2. Counties that have been created from taking religious enemies' land are at peace with that enemy. Is it possible to automatically make them at war when they are created? It seems to me that the enemy would want that land back. The AI does not seem to target troops and can be entirely oblvious to the enemy systematically taking out their land because it is rarely declares war on the new counties.
(edit)
Hmm, just played around a bit more and the AI does seem to declare war on the new counties. I guess what I was seeing is vassals that gain new land when their liege uses their troops are rarely attacked by the AI.
