I kind of miss assembly line workers in my foundries and factories. It would be nice if these buildings would get engineer jobs which would enable the workers jobs. And the ministry of production could add one additional worker job to these engineers.

I'm not at all sure what you want here. It sounds like you want something very similar to what we have, but is changed in an arcane way for some reason.

Currently, the job itself determines the upkeep and output. Changing the job to something common to all foundries/factories just means that you break the current system, and I don't know to what end.

Do you mean you want your blue collar industrial workers represented?
We already have specialist metaburgist and artisans, and while they are part of the highly skilled workforce and not working class, I think that could be reasonably explained with the idea that 22nd century technology means that you don't have your guys doing repetative basic factory work anymore, that is done my machines while industrial workers are skilled laborers who do more complex tasks. (which is what a lot of industrial work already looks like in certain sectors)

"robots" in stellaris are a specific thing; (semi-)autonomous units that can fill in for jobs that would normally be done by organic pops.

regular ol' automation is almost certainly going to be widely used, regardless of robot tech.
