I am Prussia and i want some new land. I set sight for the state of Holstein, but i'm not sure if it is a good idea to conquer it?

you cannot make it liberate norway afaik, you have to seize norweigen territory and liberate it yourself. You can liberate norway with any part of norweigen territory, but the more of it you have the more viable it will be as a country.
The alternative is to help norway liberate itself, this again involves war. Destroy sweedens army and maintain the war (denying any peace deals) untill sweedens warscore is so high that revolts start. Occupy all of it's non norweigen territory and sit and wait for norway to revolt and eventually declare independence. This could take a while.

However i just weakened Sweden by taking Malmø, Jønkøping, Karlskrona and Kalmar from them and gave it to Denmark to make up a conflict between Denmark and Sweden
My scandinavian geography isn't perfect, so i'm going to assume those are norweigen province. You can still make norway if you conquer what is left and liberate it, they may even go to war with denmark over their cores, but i doubt it as they will probably be militarily weaker. Still if you play with high aggressivness it may happen.
