Right now I am the emperor of Hispania and I already own the titles of the Kingdom of Aragon and the Kingdom of Castille. Would it be best to hold just one Kingdom title and thus destroy one of the two I already own, or should I create the Kingdom of Galicia, Kingdom of Leon and Kingdom of Navarre as well?

It really depends on your style of play. More kingdoms gives your family more prestige. Personally I'd give one or two out to a distant relative. But that's just me.

So I guess if someone were to give you advice you'd have to explain what your actual goal is...if your just trying to paint the map with your empire then honestly forming the kingdoms or not forming really isn't going to make a difference.

Its a double edged sword. IF you are able to keep peace and hold everyone under your firm boot, then having king vassals can be nice, because higher title they hold, more power they will have. Ive had quite some success with this before as emperor, my kings were able to defend and expand my borders all on their own. At the same time, when your ruler dies, and they will, if the next guy to inherit it all is some retard, things can get messy, fast. Then you will regret granting vassals any power at all.

When I first started out I was wondering about this question too. Here's what I've found through personal experience.

Create king titles if -
You want more prestige.
You want de jure claims (in order to invade someone/force them to be your vassal)
You have problems with vassals of your culture (Duke or Count) joining the independence faction

Don't create king titles if -
You want to allow de jure drift to take place - you must be an empire, hold all counties in the kingdom, and not actually own the king title for it to drift into your empire
You have problems with Duke-level vassals NOT of your culture joining the independence faction. Creating the king title will just make them more unhappy, unless you hand out the king title to someone else preferably of your culture.

Personally I usually hold off on creating kingdom titles unless I want to expand, or to discourage a independence revolt (e.g. a few decades after conquering a large area through Holy Wars). The other exception is single-duchy kingdoms, where I will create the kingdom so I can destroy the duchy, then hand out the territories to counts who won't desire your King-level title.

I never, never, never give out king titles to anyone, because Kings will attempt to join the independence faction even if they share your culture, unless their kingdom is de jure part of your Empire. If you're not the HRE or Byzantium, you'll realise there are actually very few kingdoms that de jure fall under your empire, without allowing for de jure drift.

I find as big a problem as rebellious king Vassals is the fact that you can't deal with their dukes inheriting other duchies, since Crown Laws don't apply for Vassal Kingdoms. - So you can end up with say, Germany, owning duchies in Greece, Egypt, and Spain. The only way to deal with it is by assassination (which is problematic at the best of times) or by revoking the King title, which carries it's own problems.
