Really though this is more to do with my interest in history than anything else - I enjoy the pre-1492 Medieval setting much more than the later period (and yes I know CK covers that period but it also restricts me to a certain area and faith - and I like the larger scale of EU II). The Enlightenment just doesn't do anything for me.

This is true, and for this reason I would like to ask Paradox to give the players an option to no time limit game. It could easily be done, and would not meddle with the players who don't want it. Yes, but then the "extended campaign" one would assume be supported, which the game engine does not.
