As the Byzantines I was fighting this monster from hell.

Why a monster? Everytime I destroyed a doomstack (8-12k) I saw him raising his levies, obviously very depleted but then from the fog of war came another doomstack. This happened 4-5 times and then I sued for white peace getting annoyed/tired of it.

What's the dealio with this? How can he keep raising these huge armies right after I destroy them? I have to wait several months till my own/vassal's levies replenish but he apparently has a unlimited amount. This problem together with fighting a huge war bringing Egypt to it's knees and only being able to get one county for it is really depressing.

You can get more levies by lowering your levies and raising them again, often. So when you WIPE OUT the enemy's armies, he gets to re-raise somewhat healthier stacks. Obviously since you're on their home turf and trying to persecute sieges in their lands the opportunity is somewhat lost on you to do the same as your enemy.

Try to let anemic armies survive to be useless unless you know the leader of the kingdom is leading the army. I've gone headhunting for the enemy leader by re-checking his location over and over. I've won many a war by capturing or killing him in battle and throwing his kingdom into a succession crisis.
