Scotland is a powerhouse of a nation in EU4. My personal opening moves are to annex all of the Irish minors with Conquest CB, vassalise Brittany (who allies with them) and then forge claims on England. Eventually either England will explode to rebels, in which case wreck them, or England declares war on you, in which case retreat to Aberdeen/highlands, wat for your highlands (they only arrive in a defensive war and only once per entire game) then destroy England's army and carpet siege them. Take as much as you can from England and build yourself up because even if you push as far south as Lincon and hold Ireland, England can still field a larger army and economy.
In my game I took exploration, beat Portugal and Castille to the new world and made every province I own Reformed in religion and Scottish in culture. It was an enjoyable campaign.
