Are you able to have multiple campaigns going at one time?

I saw something in the cohh stream but I missed it all.

Looks like it, there was stuff in the load save screen that said "Cohh's Campaign" so likely when you go back to main menu you can either load your save or start a new campaign

I agree. It looked like the game generated a save file every time Cohh hit save. It did not look like you can tittle your saves, but they are date/time stamped and there are auto-saves too.

Are you able to have multiple campaigns going at one time?

Yes, you can have multiple campaigns in progress at the same time and saved games are managed separately for the different campaigns. All accessible from the load game UI.
