I'm pretty new at that, so how would I go about doing it? What programs would I use, etc. ?

just use notepad to open the savegames, from there its pretty self explanitory (or not sometimes)

I would think .eug should still be text files just as they are on a PC. They should open with any text-editing program. The .eug.cfg isn't text but you don't need to deal with that.
