What year is he playable from? Or does he appear in anyone's court as a landless courtier? I am obviously aware that he is Sultan of the Ayyubid Sultanate at the 3rd Crusade bookmark. However, is he playable before then?

Saladin is not scripted to appear, so if you want to play it before, you must search manually a date good for you, is easy.

He's not Caliph, he's Sunni and the Shia caliphate continues in another form. He's the Emir of Alexandria before he becomes Sultan, I'm not sure how long his dynasty holds the title from.
