I started an Ironman game with Severia at the Charlemagne start date. Now about 150 years in game time have passed and I have formed the Russian empire, switched to Russian culture, become feudal and reformed my religion (I'm still Slavic though). Since I own the Russian unit pack DLC, I imagined that some or all of those actions would cause my units to change their appearance to the DLC ones but that hasn't happened. In fact I thought that Severians and other tribes in Russia would be using the unit pack models from the start, but I assumed they looked different because of the start date. All of my vassal troops still look the same as well.

After realizing that this is happening I played a bit with different start dates. I noticed that Russian troops in the Viking age start still don't have the DLC sprites applied to them while Russian units in 1066 do have them. I even changed the religion with commands in 1066 and my units were still using the DLC models.

So I guess that my units will either change with time or not at all and it is all based on the start date of the campaign. Does anyone know what the case is?
