Actually im kind of surprised that no one has mentioned that before. Knights were the defining force of any medieval army and their presence decided entire wars. When medieval leaders were talking about their armies they were referring to the number of knights they could accumulate. Their numbers were few but their influence devastating. Infantry wasnt really taken serious until the late Middle Ages. Since most of the knights were holding land in return for services they werent exactly part of the levy but minor vassals themselves.
I think it would be great if there was a DLC (Rise Of Knights sounds awesome...and cheesy) where the number of knights are not defined by the buildings in each county but they were recruited by each lord based on the size of land that he would bestow on them (acres would be a good measurement unit). For example, if you hold only one county then your immediately controlled demesne is the baronies you hold in your name in that county (usually only the county capital). If every barony you hold is defined by a number of acres of land you could give a number of these acres for the recruitment of a number of knights, like 50 acres for each knight. Of course by giving away land your income from this barony would decrease but you would control more knights. Since you wouldnt be able to give much of your land away (especially if you are just a count) the number of knights you could have in a county would be few just like it was the case in middle ages but combined with an increased influence of heavy cavalry in battles this would give a much more realistic and dynamic system of medieval warfare. Also since the number of knights would be few you could have a choice were you can see a list of all knights in a county with their names and their coat of arms. They wouldnt be real nobles (cause that would severely multiply the number of persons and crash the whole game) but you could have some kind of minor interactivity with them.
