I realised how hard it is in the new patch when you don't get peace with enemies and have there for have high revolt risks in your provinces.

Do anybody know if the fortress size affects if the city itself revolts? Its damn hard to get back the big fortresses if they revolt.

The fortress will not prevent rebellions, but the bigger the size the less chance that the rebels will get hold of it immediately. In the beginning of the game, If You have a province without a fortress, then it´s best to either leave it that way OR upgrade it to level 2 asap. Level 1 fortresses are very prone to be taken over by rebels.

Yes, since patch 1.07 or 07b. Check the readme.
The higher the revolt %, the higher relative risk of a fortress auto controlled by the revolters.
