I am sure this is a n00b question as I just started out, but I began in Ireland holding two out of the three counties that make up a duchy. I declared war on the holder of the 3rd county and won. But the holder of the county is still in place. He is just my vassal now.

So my question, how can I get rid of this guy? He is still the ruler in this county. And now that I hold all three counties of this duchy, how do I create a duke title for myself?

click one of those 3 county titles, find the duke title(in the county window, it's above the county title). Click on it.
If it has a holder, you may be able to claim it.(If not, move your mouse upon that button and check why not)
If it has no holder, you may be able to create it.(Move your mouse to check the requirements)

To get rid of the vassal, you may just revoke him if law allows. You may consider to find him guity by plotting first to avoid tyrannies

It seems like you are already the Duke in this situation...since you have a vassal, you cannot be merely a Count, and it looks like you declared a de-jure war for that third county(that's the one that results in vassalization), which you can only do if you are already the de-jure ruler. So congratulations, you don't actually need to create the Duchy!
What orochi wrote is still valid for any future Duchy/Kingdom/Empire you want to create though.

If you want the third county in your direct possession anyway(and yes, it's a good idea), you'll need to revoke the Count's title. Normally, that results in your other vassals getting angry unless you have justification, but you only have Barons as other vassals, so who cares really? ;)

Turns out my confusion stemmed from the fact that the "duchy" was called the "Petty Kingdom of Mumu" in southern Ireland. And at the beginning of the game, I was already a Petty King of this Petty Kingdom. So anyway, the duchy question is settled.

Thanks for the responses as to how to get rid of the vassal. Seems kind of weird though that after defeating him you are not immediately given the option to kill him/impison him/keep him on.

Irish (and several other cultures) dukes are called petty kings if they're independent.

He's not deposed because you (probably) used a de jure claim rather than a personal one. A de jure claim is basically saying "that land you're living on is part of my kingdom, so you should be paying taxes to me". The land is still his, though. If you had a personal claim on the county (i.e. you have cause to say you're the rightful owner of the land rather than him) you could press that and then if you won the war you'd get to keep the land.

It's worth noting that there's a (soft) limit on how much land you can hold yourself, and you're going to have to get used to having vassals at some point. Revoking is certainly a reasonable option in the position you're currently in, though.

Once the truce expires, seeing as this count is within the de-jure region of your primary duchy, you will have access to a plot to revoke his title. So long as you're character does not have the "Content" trait.

Open the intrigue dialogue section and select "Revoke County X" from the drop down list. This will only work within your primary De-Jure Dukedom and no other unless the ruler has two counties or personally holds another county outside his de-jure primary title if he's a Duke or above.

You'll need to be well liked and he not liked though gifts will help if required to get it over 80%. It works better if the ruler your trying to revoke is underage or female.
