I have bought an army of retinues. How can I rise them? I do not see such option anywhere.

They appear at your capital and are slowly reinforced over time to fully strength. No need to "raise" them, after buying.

Each unit of retinues starts at a very small number and reinforces over the next several months to its maximum.
For example, in my current Venice ironman, I have my entire retinue cap in a doomstack of pikemen (wars go by faster if you have the most efficient soldier at assaulting holdings and when a well-led unit is fighting a significantly smaller unit, it really doesn't matter what the army composition is). Each unit started at 1 and reinforced up to 400.

And what if I will disband them. In this case I will loose all my retinues and I will need to "hire" them once again?
Yes. Only disband them if you are replacing them with a different type of retinue or your realm can no longer maintain the cost of supporting it.

Note that if your retinues are merged with other levies in an army, when you disband the army the retinues will not be disbanded, so you don't have to worry about that
