The Dyson Sphere have long been a bit of an odd duck in Stellaris. Even if the idea is extremely cool, the utterly massive discrepancy between the idea (enclosing a whole star!) and the gameplay effect (I now generate with it... about 33% of the power of my 10 planets empire?) means that it does break a bit immersion in the game.
On the other hand, Dyson Sphere makes energy-specialized Ringworlds just bad.
So what about doing the same treatment to Dyson Spheres as to Matter Decompressors and limiting them to a single type of star?
Since White Dwarves are notably smaller than main sequence stars and without fusion, that could justify limited power output, provide a interesting gameplay opportunity (I have to suitable star, let's go conquer one!), and marginally improve the utility of late-game energy builds.
And lore-wise, you could always say that material restrictions prevent construction over full-size stars.
