Restore the Ecumenical Patriarchate

So I am now Roman Empire and wish to eliminate Iconoclasm after 900AD. I lost the ability to revert by decision past 900AD, so now I have to do this the hard way.

I have Constantinople and can restore the Ecumenical Patriarchate. The problem is I don't really want to do it as it gives him the entire county as well as makes him independent. As a King tier character he then refuses to be vassalized.

I currently have the Iconoclast Patriarch sitting in Constantinople, will he convert to the Ecumenical Patriarch if I complete my quest of making Orthodox the majority again?

Or if I revoke his land and give it to an orthodox character, will that bishop then turn into the Ecumenical Patriarch?

If I can't restore the Ecumenical Patriarch except by decision I might just drop the entire thing and convert to Catholicism.

If you're sure it gives him the whole county, the only thing I could see is taking the decision, de jure claim the county so he becomes your vassal (if need be), giving him a random bishopric (if you want him to be landed), then taking the decision to re-establish your capital at Constantinople (which auto-usurps the title so it goes back to you).
