Does restoring the Roman empire give me the opportunity to convert to Hellenism ( I know you can always convert to it, but I mean for free, without paying the piety cost ), like in ck2?

Nope.
 
As far as I know, right now the only proper way to reform Rome to the Proper religion without having to go over loops to reform to a dead religion is by... using the character editor and starting up as hellenic straight away.
