The depiction of the Saoshyant as a Zoroastrian in CK2 is inaccurate. It would be akin to a Christian emperor claiming to be the second coming of Christ, and being taken seriously by the priesthood, despite displaying no evidence that he actually is the messiah. The Saoshyant, in Zoroastrian tradition, is one who brings about the final renovation of the world (Frashokereti), destroying all evil, and retuning the universe to the perfection it was at creation. Angels would melt mountains into a river of molten metal, the dead would be resurrected, and the righteous could wade through the burning river unharmed, which then flows down to hell to destroy Ahriman for good.
The coming of the Saoshyant marks the end of time, not a restoration of the faith.
As a suggestion, a more accurate term would be "Yazata," or one who is worthy of worship and veneration. The Yazatas are angelic, or divine figures, who symbolize different aspects of the world, and serve Ahura Mazda, who is the "greatest of the Yazatas." This gives the implication of your ruler becoming divine due to his/her achievements in life, similar to how mending the Great Schism has your character become sanctified.
