So, there are a couple changes to vanilla that completely ruin the game in holy war areas. And by completely ruin I mean I lost count on how many playthroughs I leave half way for a rage quit:

1) Giving the choice to infidel rulers to convert is great. However this creates the problem that converted rulers who die may end up passing their titles to someone from their former realm who is still an infidel, and if they are landed you loose them for good. For example this is very common and easy to see on the 867 start, playing as Asturias and declaring religious reconquest of Segovia. Segovia is held by an Umayyad and if you are unlucky the duchy of Segovia may end up on the andalusian caliph himself.
Some solution is needed like no interreligious inheritance for example

2) Religious revolts risk are also a great addition. HOWEVER, since the choosing the let live option when winning a a holy war only decreases unrest (chances of uprising) and not revolt size all you can do is push the date of your doomsday a little bit more. A single duchy may spawn easily 6-12k troops (Asturias reconquering as far as Toledo doesn't get more than 6k) + foreign rulers supporting them.
So what can we do to fight this? Convert provinces of course.
EXCEPT RELIGIOUS AUTHORITY FOR CATHOLICS IS SO BROKEN YOU ONLY HAVE A 1% CHANCE PER YEAR TO CONVERT.
At the start of every playthrough there is always a Karling setting an antipope. He will NEVER enforce his demand on the Papacy. Him being deposed is extremely rare. So -30% authority for ever. Also holy sites have been nerfed to half and temple sacking sinks authority to below 10% in EVERY playthrough.
Having a 1% chance of converting is just stupid

We're not nerfing religious revolts any more. We've nerfed them to death as is, to the point where a good many people argue that they're now too weak. I've seen the first point, though, and can see how that'd be frustrating.

I should clarify; if you're still losing to religious revolts in their current state, you need to slow down your religious conquests. The entire mechanism is to produce real rather than artificial limitations on realm expansion through holy war. That it happens to be limiting you means it's working. If you rage-quit every time you lose a war, that issue lies with you.

Slowing down my conquest to a point where the provinces are stable is a non viable option when the only thing i can do is convert with a 1% chance. So either you keep nerfing revolts or you fix religious authority. With everlasting antipapacy and norse-raping is completely impossible to convert

EDIT:

Also if you send your military councilor to supress revolt it wont prevent that province from spawning rebels when the time comes. So again all you do is push the doomsday date a little bit more. It is irrelevant if a province has 0 or 25 unrest. It will spawn the same number o rebels if another province with unrest shares religion

Actually, a county doesn't only convert by having your chaplain proselytize, that only increases the odds of conversion in a county of your choosing (though I do agree 1% is much too little).

I feel like everyone is exaggerating how strong the religious revolts are. They were much stronger when they were released, and personally, I'd like to go back to that.

You have choosen literaly the worst possible start from a christian, and you complain that game is hard. If I want to reconquest, I start as brittany, or ireland and work my way here
