as the title suggests, what are the recommended settings for a reasonably experienced gamer?

also what do the setting effect?

e.g if something increase the chance of rebellious vassals than I would probably prefer to avoid it as i find that an irritation.

Usually Very Hard, and Coward are considered to give the most challenge. Difficulty level affects event modifiers, and some other parameters of the game (for example: "price" of claims, BB decrease pace, and details like this). Low aggressiveness limits AI's tendency commit suicide.

i think i am playing on normal/ normal now and have previously been playing on whatever the default setting was - perhaps easy/easy

am i right in thinking that more of my vassals seem to declare independance now?

That has nothing to do with either difficulty or AI Aggression.

Difficulty determines the cost of titles, the amount of money you can lose in some events, and in some events it determines the MTTH (higher for good ones, lower for bad ones with high difficulty).
AI Aggression determines how much the AI will DoW a random neighbour, and as such lowering this is the best way to keep the game somewhat stable. With it set to maximum, no realm can survive until it is a major power, and these will be at constant war.

That has nothing to do with either difficulty or AI Aggression.

Well, at least in CK 1.05 chosen difficulty level does affect probability of Realm Disruption events.
