I quit a game I was doing well in when I turned rebel, it seemed like no matter what it was impossible to get my lords to keep liking me!

Everytime I assigned a new castle everybody who DIDN'T get it hates me for my choice.

Is the only way to circumvent this to ask EVERY STUPID lord face to face who HE thinks should get it, and then choose the path of least resistance?

That is the only way I have been able to get some of my lords relationship points not to drop. I also have had to spend a lot of gold sending gifts threw lords wifes to raise rep back up this really is a pain and needs to be fixed. Or maby we are missing something?

You'll never obtain a perfect reputation with every lord because when you award a fief, any lord who dislikes the one you awarded it to will suffer a reputation hit. Not much you can do about it.

So you've got two options. The first is to play into the faction politics and reward those lords who like each other and are loyal to you. It'll annoy their enemies, and it might drive some lords to desertion, but it means you'll always have a core group with a high relationship that you can trust.
The second would be to take the path of least resistance as you describe. Though to save you some time, generally the lords expect to be kept equal, and faction wide reputation hits tend to be because you've awarded a lord too many fiefs.
The tricky bit is, not all fiefs are equal. The AI considers a town to be worth multiple villages, and castles are somewhere in between. The easiest way to do it is find the lord with the lowest number of fiefs (like a single village) and check the lord with the most holdings. Assign fiefs to the lower lord until they're equal, and move on up through the list until everyone has more or less equal holdings.

Depends on your starting level.

Quite a lot of the game is about preparation to conquest.

If the lords you ask to join you are already high with you, the consequences of assignments are to be neglected.

I usually rely on a core of lords who are maxed to me (100) This wont change the day if they lose a few points because they do not like my choices.

Now, you might have to rely on a lord who is not enough dedicated to you.
The best is to ride with him during campaigns or not (right-click on him->accompagn) Everytime he is in a battle, join him. This will counter any loss he will face because of land assignment.

Better imo to start with lords who are already up to 30 relationship at least.
