Hello, august Paradoxian comrades! :)

Looking for a good, quick, recommendation as to what nation to next have a nice long play-through with.

Excluding: Byzzies (<3 done to death). Berber nations (Algiers etc. also done to death) and Osmanli/Ottomans. No HRE nations, please but anything else is just fine.

Timiruds are a nice, "easy" choice for a Horde nation because they can actually reform very easy by forming the Mughals. They'll also turn into Muslim tech, which your already familiar with. You won't lose the satisfaction of constant warmongering though, because with reduced coring costs they can afford to spend the majority of the game in wars.

Burgundy could also be a nice nation if you want to try western for once, and you'll be working against the HRE instead of for. Nice replayability too: You can go for a Netherlands-trading game, a Lothringia-remake game, a Colonization game, a Lets-Break-HRE game.

Why no HRE nations, out of curiosity?

I think AE might be why.

Long story, but I find no interest whatsoever in the HRE and I feel EU series still has an HRE focus like no other polity enjoys. I look at the EUIV setup screen at 1444 and I only see one Empire with its three provinces anyway. In other words, political bias, daft as that may sound.

One of my favorite campaigns was as Novgorod to Russia, its challenging all the way through because when you finish Muscovy, you have to deal with the some form of Poland/Lithuania (Commonwealth or not) and then Denmark.

Played Novgorod to death in EUIII, before my epiphany to the brilliant multi-faceted jewel that was the ERE. But, yea, Novgorod can be a lot of fun-ness.
