1. do mercs move around? while playing SW scenario as a Joroastrian count, I had 2 merc bands that cost 50 golds to hire to only disappear after the first month.

2. what's the condition of burrowing money from jewish merchants? I had them in one game, but when I loaded up the same save it diappeared.

3. how do I build a jewish community?

2. You need a Jewish community in either your demense or the demense of a direct vassal mayor's, and you must be independent, are the requirements, I think.
3. You don't. They arise via event.

how can i change or delete the mod that makes me lose buildings in a siege?

ok i found the answer to my own question after checking the mod files.
There is an event listing file, in the events folder in ck2+ mod folder. You can find any event ID there and the file where it is defined in. Just go to the listed file and change any event you want to your liking. I for example changed #1000182884 and reduced the probabilities A LOT for the damn siege loss of a building. Will see how it turns out.

The "Heir is a daughter" event. Is there actually any benefit to educating your female heir? Is there a penalty for not doing it? Because if all I get for not educating her is that flat -10 relations penalty and educating her makes everyone hate her for 50 years, seems like a pretty pointless decision.

Your vassals will like you more if you are training your female heir.

Why does Norman vanish from all but 3 Norman provinces in 1100.11.11? Francification/centralisation of language wasn't a policy until the French Revolution as far as I know

oh my god... i just inherited the ERE after some smart marrying, but now I find out that the noob AI has let the varangian guard go independent... Is there any way to write a script for the ERE to vassalize the Varangians like the Kingdom of Jerusalem can vassalize the holy orders

You will have the title then. Give it to anyone on your court and they will become your vassal again.

Also type charinfo 1 to see your char and other chars ID. Just hover over the portrait when you enabled.
To turn it off type charinfo 0

Since 2.0.4 you can simply type 'charinfo' for both to enable it and to disable it :)
