I am holding the title of Paris. In Paris you can build Notre Dame as a Christian. Is there any possibility to replace it with a different holy building as another Faith?

Notice the phrase "holy building" - what other faith besides Christianity considers Paris to be significant?

No. Some holdings have specific historical religious buildings, some of which are restricted to a specific faith while some can be used by multiple faiths. Since Paris was only ever ruled by Christians historically, only Christians can build and use Notre Dame.

There's a crusade coming. I don't want to send my army, as I just spent a decade and a half trying to disentangle myself from wars, get my cash flow back to positive, and claw my way out of debt. I have enough gold to donate a little to the war chest, but I can't figure out how to do so. So how do I donate to the war chest?

Bottom right corner should, where icons for your ongoing wars are usually located, should be a white shield, for the crusade. Select it, and option to join or donate should be there.

I would participate. It is not too hard to be highest contributor if you loose enough man and just keep sieging. Just arrive a few month in when the other participants already arrived and decimated some to the enemies. Always keep an eye on your contribution rank. if not first place, keep sieging and fight smaller enemy armies. Split up your armies (make sure you lead one of them and if you have an heir, he should lead the other one). You will get a nice big cash price (somewhere around 400 or 500 gold, it depends) and can put a kin of the throne of whatever you fight for (Kingdom of Jerusalem?). Also, I usually take a lot of prisoners of which a lot of them can be ransomed for good cash or executed for dread (that can make people at home to leave factions). If you and maybe also you heir are leading armies, you both get the crusader trait, and you get a lot of piety as well (a lot of money from the holy father down the road). Usually all this pays of for the disruption.

The thing is that this brings up the crusade view, but there's no option available to donate. Only an option to pledge my troops for the war. I gave money to the pope when he asked for it. Could that be why the option didn't appear, and the menu message at the top telling me I hadn't given money was wrong?

Couldn't really afford to do that at this time. I needed my army at home to keep my nobles down. Alfred the Great (who DID participate in the First Crusade, which we lost hardcore) had just died, and the new King (Alexander) was finding that a little sharp steel went a long way towards keeping the nobles who had been loyal to his Grandfather loyal to him. Probably going to have to go through that again when the ailing Alexander finally passes away after nearly 60 years on the throne leaving Alfred II in charge. At least Alfred II will be an adult with some impressive stats of his own and an established power base in Europe. So it's important to know where I can donate if when the pope comes to me for money I can't afford it at the time.

Main Question: Is it possible to reform a faith you've created from a prior ruler?

Details: Playing Italia, and it's been some 250 years since first creating a new Christian faith (from Catholicism). I'm roughly 5 rulers in to playing, and I wanted to make some adjustments to the faith (make dynastic slaying a crime; change clerical appointment to Temporal/For Life), but not change the faith completely. Is this possible to do? Because my only option given is to create a new faith (no option to reform), and I can't use the same name.

Nope.
Only faiths you can reform, are the unreformed pagan faiths. And they also give you the warning "Attention: Once [insert unreformed faith name here] is reformed, it can never be changed again!".
Didn't create my own heresy for a long time now, so I'm not sure, but shouldn't your faith creation give you a similiar warning?
Anyways, either you stick with your heresy or create a complete new one.

Anyways, either you stick with your heresy or create a complete new one.
For sure yeah it gives me the same warning. The warning is only a once-per-ruler thing though, instead of a once-and-for-all thing. You can change it again once your ruler dies, and I changed my faith long, long ago. But anyways, thanks. Kinda weird that you can't reform Christian faiths.... considering The Reformation was literally about Christian reformation. haha

Yeah, don't know why (maybe they wait to create a dlc for this and so they can sell it for money to us...) you always have to create a heresy from a reformed faith.
Would be much much more cooler if I actually could as "super-duper-pious-ruler" and "best buddy of the pope" try to actually reform catholicism for example!
Even if the reformation falls into the eu4 time line, it would make for interesting gameplay: 'old, stubborn catholic rulers' declare war on you, as you are a 'Ketzer'! Maybe out of nowhere suddenly a second pope emerges and tries to stop your reforms.
Man something like that (also reformation to muslim faiths) would let me actually far more play those religions!

Answer to my question about donating gold to the Crusade you get the option to do that if you choose not to donate Gold when the event first pops up. Once you have donated gold, you can only pledge troops, and rather than have a donate gold button greyed out or absent, they change the button layout so it's the only one you have. If you donate gold via the initial pop-up or when the pope asks you to pledge troops or give gold, the tooltip appears at the top of the screen saying you have not given gold or pledged troops even though you have.

According to Wiki the two exclusive Dynasty Legacies for Northern Lords DLC require the Norse culture to unlock. Around year 950 you might be forced out of Norse culture however. Are there ways to circumvent this? If you have no holdings in mainland Scandinavia, will that help? How exactly does the game define Northern Europe region? (Seems you get to keep Norse if you are not in that region)?

If your ruler is one of the Northern Germanic cultures (Norse and their successor cultures) then you will always have access to those perks as long as you stay Northern Germanic. If you have already unlocked at least one perk from either tree then you keep your access to the tree even if you change cultures. So, for example, you unlock the first perk for the Pillage tree and afterwards convert to Russian culture you will still have full access to the Pillage tree but lose access to the Adventurer tree since you didn't unlock a perk for it before converting. Northern Europe is the entirety of Scandinavia I believe. Been a while since I checked.
