Has anyone else noticed that Poland seems to languish in dire straits when they get released? My last few games they haven't really been able to build much of an army or factories..I suppose it could be low prestige or something..?
Well, considering that Poland didn't actually exist during the time period it makes sense that you'd struggle with it once you manually release it. In any case, how did you release it? If you released Poland from Prussia than you'd actually have very high literacy for 1836(just over 50%) however you have a pretty small and awkward looking chunk of land. If you released it from Russia than you'd suffer from the same low literacy(10%) as the rest of Russia pretty much, but you have more territory and it's more consolidated. If you use the console to release Poland from both Prussia and Russia than play as Poland your literacy should actually be decent(higher than GPs like Russia, Austria, the Ottomans and Spain), you should have a nice looking territory and as an added bonus removed both the Prussian and Russian cores from your lands making the rest of the game significantly easier as you won't need to deal with a super power wanting its cores back(whichever of Prussia/Russia you didn't release yourself from). You can even go further and release the rest of the Polish-Lithuanian Commonwealth's territories before releasing Poland which makes it incredibly easy for you to form the Polish-Lithuanian Commonwealth from Poland, which in turn gives you access to the sea(via Ukraine) and thus the ability to go after uncivs and participate in the scramble for Africa.
So it's hard to say why you're struggling with Poland since there are multiple ways of releasing it. Unless you do it the cheesy way(the last option mentioned above) than your main struggle is going to be conquering the rest of your land from the other super power and than holding on to the territory as that super power is probably going to declare constant wars on you trying to retake it(just as France usually does once Prussia takes Alsace-Lorraine from them to form Germany). The low literacy(if released from Russia) is also bad but workable in the same manner as playing with Austria, Russia, the Ottomans, Spain and most uncivs. It just means a slower start and not industrializing right from the get go(which isn't actually a bad thing) and having a military on the small side until you reclaim all your territory.
