CK3 is so easy because it should attract a broad amount of players. In combination with the marketing of the product, this was very successful at the launch of the game. But the "hype" for CK3 ended so fast as it has come, current player numbers speak for themselves. I bet half of the people who play CK3 regularly use mods, because to me the base game just feels like it was made in a rush or without passion.

I know Paradox is working on more peace-time content, but for myself I doubt that it can solve the other base game problems. For example, why can I raise my whole levies in a single province that is remote of my empire? Why do dissolution factions want to destroy culturally and religiously homogenous empires? Why is the vassal limit so high that it allows you to create the Roman empire full of dukes? Why does artifact management seem so annoying? Why does the hold court option seem so detached from the game, can't it be more meaning- and impactful?
The only challenge CK3 offers is the one you create for yourself and that is where it usually becomes highly unrealistic. Other than that it is far too easy to achieve things in CK3.
