I am currently the King of Ireland, Scotland, and Wales. If I press my wife's claim on the Byzantine Empire and win, will my heir also become an heir to the Byzantine Empire? Also, how does the game work when my wife holds a higher title than I do, i.e. do I become a liege of her and play as her then, does nothing change except she claims the empire, or something else?

You're gonna have a bad time getting there ;) your wife won't be your vassal and you won't play as her, and you must check the bizantine succesion, if it's same as yours then your heir will be also heir to the ERE.

If the Byz Empire has primo succession, than her first son (presumably also your heir) will indeed be her heir. But, if you get a new son after this, it'll be Born in the Purple, and become the new primary Heir for the Byz empire (special mechanic). It'll still be a member of your Dynasty on the Throne, and your heir will have a claim to the Byz Throne on succession, which you could press against your brother to unify the realms.

Since she's not of your dynasty (presumably), and gets a higher title than yours, she will not become your vassal (if you press someone's claim, they become your vassal if 1) title is lower than yours, and 2) they are either already your vassal, or of your dynasty).
She will have a Non Aggression pact with you, which you can turn into an alliance.

The succession is Elective. Is there anyway to get my son elected to the title, and is there any greater chance if he's born in the purple?
It is, but due to wrong culture and religion, it is likely some other guy will get it.

I'd suggest waiting til you yourself(that is the heir you got through that princess) have a claim and invading with that.

Will my heir get a claim on the empire if my wife has a claim on it?
You can mouse over her claim to see if it's inheritable or not. If she's the daughter of an emperor it will be. However, your son's claim will be weak even if your wife's is strong. I believe you can press weak claims if there's a revolt for the throne going on, though, and those are pretty common for the Byzantines.
