So I decided to remove a few assets from my content manager list. I know removing some mods may corrupt your save file, but didn't think this applied to buildings? There were a few growable buildings, and a few ploppable buildings (that I did not use).

So when I try to load, it suddenly stops about 80% through, and I get "Object reference not set to an instance of an object" error.

It'll apply to anything that gets saved into the save file. Since buildings and their model name get saved it'll have trouble if you try to load something after it's removed. As you can see, it's managed to load a few models in, got to the buildings that don't exist and given up there, so it's not loaded the rest in.

Could you not re-add the models temporarily to see if it was the problem, delete them, then uninstall them again?

Thing is, I removed a bunch of unused (though there must have been some plobbables in there..) buildings, and I'm not sure which ones I had.
