I just got attacked by England (with a lower tech rating and lower diplomat skill) pressing multiple casus belli at the same time. Question is: how do I do that? What is the prerequisite for doing that? Feels like I have to go to war over and over unless I can usurp an entire duchy or kingdom.

You're seeing it right. The reason England was able to pull it off against you is because their ruler directly had personal claims, perhaps fabricated on several counties, or whatever. Similarly, if you fabricate claims on counties or duchies, you can then launch one major war a take it all at once. If your player dies, though, your claims are lost. You have to weigh the risk of trying to amass more claims versus when you think your ruler is too old.

I think I have tried doing that but I have ended up with only one claim after the war (except in a few cases when something happened which I did not understand).

If a person got more than one personal claim he or she can press them all in one war. The keyword here is personal. If you for example fabricate several country claims aggainst one realm you cann press them all in one war. Also if you happen to inherit some claims you can press them in one war.
