As Queen of Italy I invited the count of Monferrato's Uncle to court and declared war to press his claim.

Then I remembered Monferrato is not de-jure part of Italy. So was somewhat surprised when he became my vassal. (and no, not the same dynasty either, nor did I give him land)

How is this odd? You invited him to your court, therefore, he's sworn vassalage to you already. As long as you are a greater rank than him (Queen vs Count), then when you win the war for his claim, he stays as your vassal. If you would have pressed his claim BEFORE inviting him to your court, then it would be odd that he joins your kingdom.

I do this very thing about 100 times a game to bring new lands into my kingdom.

No... inviting someone to your court does not imply they have sworn fealty to you. It means they are an honored guest.

Note the tool tip that appears when you hover over the press someone else's claim CB in the CB selection screen. It clearly states that unless the individual is your de-jure vassal or of your dynasty they will be independent.
