I am currently playing a game as Sweden; I wanted to change my capital to Stockholm, but it doesn't seem to exist. When I search, however, it shows up as 'Barony of Stockholm' in Uppland. There is no such barony. Do I then have to build a castle which will automatically be named Stockholm?

In a more general sense though, I was wondering if I could check one of the game files to see what the preferred capitals of the de jure kingdoms are. Or if that's even a thing.

I believe there are capitals of de jure empires and kingdoms inside your landed_titles files, just search for k_sweden and you'll be fine.
EDIT: Yes, there it is:
capital = 290 # Uppland
I'm not sure if this is preferred or anything but it is the capital of de jure kingdom of sweden. Empire of Scandinavia is the same as well.
EDIT 2: About stockholm, it says:
c_uppland = {
color={ 5 215 255 }
color2={ 255 255 255 }

b_sigtuna = {
}
b_uppsala = {
}
b_osteras = {
}
b_hatuna = {
}
b_stockholm = {
}
b_enkoping = {
}
b_alsno = {
}
b_vaksala = {
}
}
So it's one of the 8 possible names for a barony within the county of uppland. I'm not very familiar with the naming system but i believe that every time you build a barony there is a chance that it will be named stockholm. Or maybe the 5th barony within the county of uppland will be named stockholm. Probably the former though.

You can also just rename the main barony in Uppland to be called "Stockholm", if you are King.
Well, yes, I could. But I feel like if I have to manually name it, it's almost cheating.

That kind of thing is why P'dox gave us the ability to rename things, it helps to create the feel we want.

But... Stockholm wasn't built till 1200 something something. Sigtuna would be the most capitally place in Sweden at game start at any rate. Same County though.

The way Sweden starts, your best capital location is probably in Denmark...

Personaly my favorite capital is anyplace that can have 5 castles surrounded by counties that can have at least 3 cities filled with universities and every bisphoric having a cathedral school. it's amazing what a proper education system can do.

EDIT: sorry misunderstood the op and only half read it. but my suggestion remains valid!
