I pre-ordered the collection, so my first question is, am I getting one or two keys?

Second question is say I get my keys and Steam hasn't uploaded the DLC yet, and I put the keys in, will that cause any problems?

Third question is, is there anything I should know, like common problems with keys and Steam?

1) Could go either way.
2/3) Since your Steam and Paradox accounts are synced, there's not much to do. Whenever the keys are unlocked (you'll receive an email), you go to your Paradox account and simply hit the activate button in the keys section. Should more or less appear instantly in your Steam Library afterwards. Just requires a download and install beyond that.

you can redeem the key on steam but it will not unlock till release time and you will only get one key
