Just had a really nice Bavaria game - definitely the easiest country to form Germany with
Pre 1.12 give me Zazzau or <insert random India minor>. Post 1.12 I'll go with Ajuuraan, since the theocracy has been the only real fun game I've played in these patches.

1. Castile, they are the country that gives me the most complete experience of the game
2. Austria, gives you something else to do than conquer and has amazing RP potential
3. Bahmanis, I've only played one game with them but its a blast. India is my favorite ROTW area, and Bahmanis is my favorite there

give mewar a whirl. fascinating country history, you have to unite the rajputs then stand against the Islamic sultanate alliance block. Oh yeah if the timurids don't go kaboom....yeaaaaaaaaaaah. The rajputs have a history of resisting the Islamic invasions, only you can stem the flow of islam into india!

Seems like Brandenburg comes out on top. Too bad there are so few countries which start out small but with an op mil idea set. BB, Nepal, Tabarestan and of course the uber-pope ftw

Sweden, because **** yeah. Merchant republics in general (e.g., Hansa, Venice, the Netherlands*) and interesting OPMs/small tags (e.g., Ceylon, Trebizond, Albania).
* Technically not a Merchant Republic, but they get something even better.

1. Netherlands, any minor start
2. Crimea, love the location as the "wild west" of the old world.
3. Kilwa, african games can be much fun and very different, being rich helps
For all three I love the fact that you have to start out carefully and don't become an unchecked mega blob in 10 years while still having such diverse options to expand
