has to be Genoa for me, I like the possibilities and early game challenges of holding a multi-cultural nation with poor religious unity together, although Mongolia is only second because the religion is terrible

These are the countries I was pleased to play more than once :
Korea - My first campaigns in euiv back in very early version, conquering Ming with the help of god king feels so good.
Hansa - Its location is very nice for nation forming. I formed Netherland in old version, and I formed Poland in 1.12. Republic is op.
Ottomans - It's op kebab. First campaign was orthodox revoking in early 1500. Second was my first one-tag wc in 1.12.

Something about Hungary and pushing back the Ottomans is always fun, as well as pushing west!
I love Castile/Spain second because of the vast amount of things that i can do, and cause its fun to own 1/3 the world easily.
Champa the lonely Buddhist in Indochina one of my favorite from EU3 and still one i enjoy to play in EU4.

Genoa: Best for building a trade empire that spans the whole world. Hansa is fun, too but it's always the same and you are op as hell.
Venice: Starts reasonable strong not OP though, grows weaker over time because NIs. Love to play them and let vassals do the fighting. Also Monarch-Point monster. No other tag can farm them like Venice. Probably best for playing a vertical game, which i like.
Friesland: Republican start, later NED


I find it hard to really like any ROTW tag for more than 1-2 playthroughs. Either you start out overpowered outright (Japan, Bahmanis, Ming, Timurids....) or you will be after 50-100 years even if you take it slow because there is usually only 1 big target to take out, after which you take its place and end up westernizing and doing a WCesque game. North Africa is an exception but that's almost Europe. In Europe you just have more options. The first years as Japan, Daimyo or one of the Indian God-Kings are a blast though.

I love the idea of growing enough to proclaim and win my own crusades, also has a decent position for an indian trade empire if you take egypt et al. Lot of flexibility in things that aren't religion.

Hamburg, I played a tall hamburg game where I only ruled northern coastline up to east frisia of Germany then had a Prussia march(so about 80k troops at home,40k mine, 40k theirs) and I had a colonial Empire as well.(colonized most of Canada,midwest and Thirteeen colonies, due to me staying tall I was having issues keeping them under control)

I then made it my mission to save the hindus in India so I established the IndienKorps and started intervening in india while using Ceylon and Bangladesh as a base.

Another amazing game was Mewar, they're a blast to play. I conquered most of india(left tamil country alone had an ally there,) and Persia then duked it out with the ottomans at the endgame.
