Another one from me.

Started as Ælla of Northumbria, facing the great heathen army, i lost the northern portion of my duchy, but was able to retain control over the rest and eventually conquer most of england via holy wars. Full NK mode.

Man, what is the secret to being successful...my vassals are never happy...and if they are, when i die...well need i say anything. Factions all over

The key things to do are to:
1) Either educate your heir yourself if you've got good traits, or get them a really good guardian if you haven't.
2) Make sure, as far as possible, that you don't have land or titles that your vassals desire - that -25 opinion penalty can be critical.
3) Save up gold prior to your character's death so that you can bribe vassals into loyalty on your new character's succession.
4) Try and break the power of powerful vassals as a last resort if they're really threatening.
5) Use your Spymaster and Chancellor to improve troublesome vassals' opinions of you and stop them starting factions or joining them willingly.
6) Try and ensure, unless you're specifically trying to RP a different situation, that your vassals are of your culture and your religion, to minimise the chance of independence factions.
7) (highly optional; you might want to RP something different) Try and run the Elective succession law, as the +20 opinion for vassals not of your dynasty can be very helpful.
8) Get as many strong alliances as you can; I was saved during a particularly horrible revolt as the King of an area covering Leon, Castille, Galicia, Aragon, Navarra, Aquitaine and France by the fact that a 5,000-man stack from the Byzantine Empire turned up to assist me at an absolutely crucial moment.

Thank you very much! Number 8 i have a question about...if i am playing as country A and want to attack country B. But what if country C is allied to us both? What determines who he helps? And what determines the chance of an ally helping? Their opinion on me or if they are in another war? I had this issue in EU4 as well...thought France would help me, but those frogs said no.

Speaking of Jews...
095C467A4237ACAB6BAD032167C7022C12480EF5

Here's my Ashkenazi Jewish empire, so far 4 rulers, all of which have a level 3 or 4 military education. Definitely going to convert this save to EU4, but with a couple changes. Most of what I have right now stays, but later I'll start making some of my vassals independent (namely greece when i inevitably take more land from the byzantines, sicily, italy, turkestan, and khivia). I've also had quite a few defensive wars, the Byzantine Emperor attacked me five times (the first one i should have lost but got lucky), I got attacked by some host which was a lot less threatening than expected, and finally the Seljuks invaded, and while they were rampaging in Khivia the Byzantine Emperor declared war on me for a couple counties and a duchy.

Other random observations:
-Poland is Jewish
-Scotland owns most of Great Britain, and the ruler of England is Scottish
-I've never seen AI Navarra do that well, and no they weren't originally Aragon and neither did they form Aragon
-Norse Sweden is huge as always

How comes your empire is called Northumbrian empire and not Byzantium, did you rename it on the files or something?
