Just wondering if someone can point me in direction of a mod to make portraits stay young looking?

I'm not sure but I highly doubt there is. But could be wrong.

I think the "Are you a god" mod makes your character immortal, thus keeping his portrait at whatever age you set him as. Go check it out in the mod forum, just search "Are you a god" or something like that.
Go into Crusader Kings II\common and open the defines.lua. There found this:

PORTRAIT_ADULT_MALE_AGE_THRESHOLD = 16, -- Male child to adult age portrait switch
PORTRAIT_ADULT_FEMALE_AGE_THRESHOLD = 16, -- Female child to adult age portrait switch
PORTRAIT_MID_AGE_THRESHOLD = 30, -- Middle age switch for character portraits
PORTRAIT_OLD_AGE_THRESHOLD = 50, -- Old age switch for character portraitsThis means... With 30 they became an older version, and with 50 they became the very old portraits. Change it in whatever you like (100... 200 then you will never see the old portraits).

I am guess that changing the Portrait Mil and Old to say 200 would be what you're after if you want EVERY character to be ageless in visage.
