What is the actual benefit of having a large population?
I've seen provinces with 10 times higher pop than others, but they still look very similar when it comes to the Tax and Production numbers...

In simple terms, nothing. In less simple terms, some events go faster by it, but only in fractional amounts and you would have to look at the code.

probably a province with a less attractive resource, the benefits arn't that noticable, but once you reach 99999 population in a province, tax and production has been increased quite a bit..

There's no strong benefit to increasing population. It increases manpower and production income, with a 100,000 pop province making 2 times the amount a 1000 pop province will for the same base value.
