Poland and Ottomans should be historical rivals

The Ottomans already have several historical rivals. In 1444, the Ottomans aren't deep in Europe yet, so there is little reason for them to inherently come into conflict in 1444.
I find the whole concept of "historical rivalry/friendship" as inappropriate factor, limiting your options and diplomacy.
It's especially ridiculous in case of Potugal and Castille/Spain.

Because for Turks Poland was nothing important. Main goal in Europe after fall of BE was Vienna - not Krakow.
