And if VEN has no greek culture but TUR has it then that might result in rebelcontrolled greek provinces to defect to TUR far before it´s wanted.
Yes, because of this Venice should keep greek culture at least until a TUR siege of or a TUR controlled Crete province.

What would you choose between Montferrat or Asti?

Montferrat.
Not only because it´s larger and was a margraviat instead of just a city republic like Asti

but also because it fit´s into the events about the Mantuan succession war

I think Asti would start under Milan (Visconti) and be ceded to Savoy in 1531 so there would be no need to create a new country. Also, it seems the city of Asti was larger than Casale.

On the other hand, it would be nice to have Montferrat for the Mantuan succession war, yes.

Looking great, as your whole reviving FtG project idea.;)

I would consider adding Basilicata (would make Naples provinces looking more natural and less "blocky") - it could be rather poor as historically.
Probably Latium and Campania are better names for Rome and Naples?

Not sure if Modena's access to the Ligurian sea is a good idea really.
