Its getting pretty silly, with entirely random pockets of religions popping up pretty reliably in the games.

Perhaps it would be easieset to just limit it to religions of the same group, so you don't have Finns converting to Hinduism, but you could have some Catholic ruler swayed to be Cathar. Alternatively, limit it by distance. If there's no Muslim rulers near you, you won't get a Muslim physician that will convert you. Or limit it entirely to un-reformed religions.

Or some combination.

It's already limited to unreformed religions. And it's also limited by distance.

Just to clarify; there's a random event that can occur for tribals/nomads that makes a physician-missionary appear in their court. This character will try to convert them, but if the receiving character is a non-pagan AI character they will always say no. If they are pagan they follow the exact same rules as if a normal missionary would have been sent to them (norse less likely to accept becoming sunni, tengri preferring sunni, etc). So this event can not have converted any tribal ruler on the British isles, unless they had become pagan in some way. :)

Also, the event is dependant on diplomatic range, so if you play with diplomatic range turned off completely you might see some interesting physician missionaries appearing. :)

Then how are we seeing Hindu Finns, if its also limited by distance?

Either way, seeing Sunni Danes in the 8th century stretches credulity a bit.
