If you have the sword of Islam dlc you could just try surrendering. In my experience, the muslim invasion casus belli doesn't kick the original holders out of their lands, they just become vassals and possibly subject to either revocations of titles or conversion to the invaders brand of Islam.
The problem is, I'm not sure what happens to the rightful ruler of the kingdom, you in this case. At the very least, you would lose some vassals as you are a king and the Fatimid sultan will pry that title of you after he wins. That would mean that any dukes you had as vassals would become direct vassals of the sultan instead. You might get to become a vassal duke under him, given that you hold atleast one duchy along with your kingdom.
Worst case scenario: the sultan simply receives all your landed titles and it's game over...

The invasion CB the muslims have doesn't, like I said, oust everybody like holy war CB does. Most of the infidel foreigners are left to hold their lands with a +75 positive opinion modifier called subjugation or some such. To help convert them to the true faith, I presume.If it is a Holy War then they get all the lands... If it is a Claim War then you end up with a new Liege, though I think you will lose the King title, so you could still be a Duke... I think it is only De Jure claims where the current title holder simply becomes a vassal of the individual pressing the de jure claim...
